4 medium-sized Yukon Gold potatoes, diced into 1-inch cubes

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil

1 cup chicken broth

Juice of 1 lemon (about 2 tablespoons)

Prep the Chicken and Potatoes: Begin by seasoning the chicken thighs generously with salt and pepper on both sides. While the chicken is being seasoned, rinse the Yukon Gold potatoes under cold water, then cut them into uniform 1-inch cubes to ensure even cooking.

    Brown the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully add the seasoned chicken thighs to the skillet. Cook them for about 5-6 minutes on each side, or until they develop a golden-brown crust and are fully cooked. Once done, remove the chicken from the skillet and set aside on a plate.

      Cook the Potatoes: Without cleaning the skillet, add the diced Yukon Gold potatoes. Sauté for about 10 minutes, stirring occasionally to prevent sticking, until the potatoes start to soften and attain a golden hue. If they cling to the surface, add a little more olive oil to loosen them.
