1 large avocado, sliced

1 medium ripe tomato, sliced

1 cucumber, thinly sliced

8 slices of whole grain or sourdough bread

Fresh mozzarella cheese, sliced (optional)

Prepare the Pesto: In a food processor, combine the fresh basil leaves, arugula, nuts, minced garlic, and grated Parmesan cheese. Pulse the mixture until finely chopped.
