Ingredients

2 cups ripe strawberries, hulled and quartered

1 cup Greek yogurt (choose between vanilla or plain)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup crushed graham crackers (approximately 8 full-sized sheets)

1/2 cup mini chocolate chips

1/4 teaspoon sea salt

Instructions

Prepare the Strawberries: In a medium mixing bowl, add the hulled and quartered strawberries. Drizzle with about half the honey or maple syrup. Gently toss the strawberries to ensure they are evenly coated. Allow them to sit for about 10 minutes, which will help them macerate and release their flavorful juices.

Mix Yogurt Base: In a separate bowl, whisk together the Greek yogurt, the remaining honey or maple syrup, and the vanilla extract. Whisk until the mixture is smooth and homogenous, creating a creamy base for your clusters.

Combine Ingredients: Once the strawberries have macerated, incorporate them (along with their juices) into the yogurt mixture. Sprinkle in the crushed graham crackers, mini chocolate chips, and sea salt. Gently fold the ingredients together with a spatula, ensuring everything is well dispersed without overly compromising the shape of the strawberries.

Form Clusters: Using a tablespoon or a small cookie scoop, portion out the mixture onto a parchment-lined baking sheet. Space the clusters about 1 inch apart to allow for even freezing.

Freeze: Carefully place the baking sheet in the freezer. Allow the clusters to freeze for a minimum of 3 hours, or until they are completely solidified.

Serve: After freezing, remove the clusters from the baking sheet and transfer them to an airtight container for storage. Enjoy immediately for a refreshing treats or keep in the freezer for up to a month for those hot days when you need a cool snack.

Prep Time: 15 minutes | Total Time: 3 hours 15 minutes | Servings: Approximately 12 clusters
