2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus extra for garnish)

1/4 cup honey or maple syrup (adjust to taste)

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

1 tablespoon water (for raspberry puree)

1/4 cup granola (optional, for added crunch)

Instructions
 

Prepare the Raspberry Puree:

    In a small saucepan over medium heat, combine the fresh raspberries and 1 tablespoon of water. Cook the mixture for about 5 minutes, stirring gently until the raspberries begin to break down and it turns syrupy. Once ready, remove from heat, and strain through a fine sieve to remove the seeds, resulting in a smooth raspberry puree. Allow it to cool completely before using.

      Mix the Yogurt Base:

        In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Stir continuously until the mixture is well blended and smooth. Taste the yogurt mixture and adjust the sweetness if needed based on your preference.

          Assemble the Swirl Rings:

            - Begin by preparing silicone ring molds or donut-shaped molds.

              - Spoon a layer of the yogurt mixture into each mold, filling them halfway.

                - Next, add a swirl of the raspberry puree on top of the yogurt layer, and using a toothpick or skewer, gently swirl the two together to create a marbled design.

                  - Pour more yogurt mixture over the raspberry layer until the molds are filled to the top, and perform another light swirl with a toothpick to incorporate some raspberry puree on the surface.

                    Freeze the Rings:

                      Carefully place the mold into the freezer and let the rings freeze for at least 4-6 hours, or until they are completely solid.

                        Unmold and Serve:

                          Once the rings are frozen, gently remove them from the molds. If they are difficult to release, run warm water over the outside of the molds for a few seconds to help loosen them. Serve immediately, garnished with fresh raspberries and a sprinkle of granola for an added crunch if desired.

                            Store Any Leftovers:

                              Should you have any leftover rings, wrap them tightly in plastic wrap or place them in an airtight container before returning them to the freezer for later enjoyment.
