Ingredients
  

2 cups plain Greek yogurt

1 cup pumpkin puree (can be canned or freshly made)

1/2 cup maple syrup (adjust to your sweetness preference)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup crushed graham crackers (for the crust)

2 tablespoons melted butter or coconut oil

Whipped cream (for topping)

Optional: chopped pecans or walnuts for garnish

Instructions
 

Prepare the Graham Cracker Crust:

    - In a medium mixing bowl, combine the crushed graham crackers with the melted butter (or coconut oil). Stir until all the crumbs are well-coated.

      - Distribute the crumb mixture evenly across the bottoms of 8 small cups or ramekins, pressing down firmly to create a solid crust layer. Set these aside.
