Ingredients

3 cups fresh or frozen peaches, sliced

2 tablespoons light brown sugar

1 teaspoon ground cinnamon

1 tablespoon fresh lemon juice

1 cup plain or peach-flavored Greek yogurt

1 cup vanilla or almond milk

1/4 cup honey or maple syrup (optional, adjust for sweetness)

1 teaspoon pure vanilla extract

2 cups granola or oat crumble (store-bought or homemade)

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Peaches: If you are using fresh peaches, wash them thoroughly, peel the skin off, and slice them into thin wedges. In a mixing bowl, combine the sliced peaches with the light brown sugar, ground cinnamon, and fresh lemon juice. Toss gently until all the peaches are evenly coated. Let this mixture sit for about 10 minutes to allow the flavors to meld.

Blend the Yogurt Mixture: In a separate bowl, add the Greek yogurt, vanilla or almond milk, honey or maple syrup (if using), and pure vanilla extract. Using a whisk, blend these ingredients together until the mixture is smooth and creamy. Taste and adjust the sweetness if necessary.

Layer the Ingredients: Take a 9x9-inch square baking dish (or a similarly sized container) and start creating layers. Begin by evenly spreading half of the granola or oat crumble on the bottom of the dish.

Add the Peach Layer: Next, evenly distribute half of the marinated peach mixture over the granola layer, ensuring that the peaches are spread out.

Pour Yogurt Layer: Gently pour half of the yogurt mixture over the peaches. Use a spatula to spread it evenly, making sure to cover the peach layer completely.

Repeat the Layers: Add the remaining granola or oat crumble on top of the yogurt layer. Then, evenly spread the rest of the peach mixture over the granola. Finally, pour the remaining yogurt mix over the top, ensuring everything is well covered.

Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil and transfer it to the freezer. Let it freeze for at least 4-6 hours, or until it is completely set and firm.

Slice and Serve: Once the squares are frozen, remove the dish from the freezer and allow it to sit at room temperature for about 5 minutes. This will make slicing easier. Cut the frozen mixture into squares. Garnish with fresh mint leaves if desired for an extra pop of color.

Enjoy: Serve your Frosty Peach Cobbler Bliss Squares as a cooling and delightful dessert that’s perfect for warm weather days!
