Ingredients

2 cups rolled oats

1/2 cup nuts (chopped almonds or walnuts)

1/2 cup honey (or maple syrup for a vegan alternative)

1/4 cup unsweetened cocoa powder

1/4 cup brewed coffee (cooled to room temperature)

1/2 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1 cup Greek yogurt (plain or vanilla-flavored)

1/2 cup mini chocolate chips

1/4 cup dried cherries or cranberries (optional)

Instructions

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, chopped nuts, cocoa powder, and sea salt. Use a wooden spoon or spatula to stir the mixture thoroughly, ensuring all dry ingredients are well combined.

Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), cooled brewed coffee, and pure vanilla extract until the mixture is smooth and fully combined. This will create a flavorful base for the bars.

Combine Mixtures: Slowly pour the wet ingredients into the dry oat mixture. Using a spatula, stir thoroughly until every bit of the dry mixture is coated with the wet ingredients, ensuring a uniform blend.

Add Yogurt: Gently fold in the Greek yogurt, mixing until it's well incorporated. The texture should be sticky and cohesive, holding together well without remaining dry.

Incorporate Chocolate and Fruits: Add the mini chocolate chips and dried fruits (if desired) to the mixture. Stir carefully to ensure they are evenly distributed throughout the granola base.

Prepare the Pan: Line an 8x8 inch (20x20 cm) square baking dish with parchment paper, allowing some excess paper to hang over the edges. This will facilitate easy removal of the bars once set.

Fill the Pan: Pour the granola mixture into the lined baking dish. Use a spatula to spread it out evenly, pressing down firmly to compact the mixture, which helps the bars maintain their shape after freezing.

Freeze: Cover the dish tightly with plastic wrap and place it in the freezer. Allow it to freeze for at least 2-3 hours, or until the mixture feels solid throughout.

Slice and Serve: Once fully frozen, lift the granola block out of the dish using the parchment paper as handles. Transfer it to a cutting board and slice into your desired sizes, typically yielding 8 to 12 bars.

Store: Place the granola bars in an airtight container and keep them in the freezer, where they can be enjoyed for up to 3 months. Serve them straight from the freezer for a cool, delicious snack anytime!
