2 cups plain Greek yogurt

1 cup full-fat canned coconut milk (for extra creaminess)

1/2 cup honey or maple syrup (adjust based on your preferred sweetness)

1 tsp pure vanilla extract

1/2 cup shredded unsweetened coconut

1/2 cup dark chocolate chips (70% cocoa or higher for richer flavor)

1 tbsp coconut oil (to help melt the chocolate)

Pinch of sea salt

Optional: Fresh fruit (such as berries or banana slices) or chopped nuts for toppings

Instructions
 

Prepare the Base: In a large mixing bowl, combine the plain Greek yogurt, full-fat coconut milk, honey or maple syrup, pure vanilla extract, and a pinch of sea salt. Use a whisk to blend these ingredients together until the mixture is smooth and creamy.

    Incorporate Coconut: Gently fold in the shredded unsweetened coconut into the yogurt mixture, making sure to distribute it evenly throughout.

      Melt the Chocolate: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Allow this melted mixture to cool slightly before using.

        Assemble the Pops: Carefully pour the yogurt-coconut mixture into your popsicle molds, filling them about three-quarters full. Then, using a drizzle or spoon, layer the melted chocolate on top of the yogurt mixture in each mold. Be aware that the chocolate will sink slightly into the yogurt.

          Create a Swirl: Using a skewer or toothpick, gently swirl the chocolate into the yogurt mixture, creating a marbled effect. Be careful not to mix it too much; the goal is to maintain distinct layers.

            Freeze the Pops: Insert popsicle sticks securely into each mold, then place them in the freezer. Allow the pops to freeze for a minimum of 6 hours or until they are completely solid.

              Unmold the Pops: To remove the pops from the molds, run warm water over the outside of each mold for a few seconds. Then, gently pull the pops out.
