2 ripe bananas

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/2 cup walnuts, coarsely chopped (or you can substitute with chopped pecans)

Pinch of salt

Optional: 1/2 cup mini chocolate chips for an extra touch of sweetness

Instructions
 

Prepare the Bananas: In a large mixing bowl, peel and mash the ripe bananas using a fork until smooth. Aim for a creamy consistency while leaving a few small chunks for added texture.

    Combine Ingredients: Add the Greek yogurt, honey or maple syrup, pure vanilla extract, ground cinnamon, and a pinch of salt to the mashed bananas. Stir the mixture thoroughly until everything is well blended, achieving a creamy and homogenous texture.

      Add Walnuts: Gently fold in the chopped walnuts along with the mini chocolate chips if you’re using them, ensuring that they are evenly distributed throughout the yogurt mixture without over-mixing.

        Line the Pan: Take an 8x8 inch baking dish (or a container of similar size) and line it with parchment paper, making sure to leave some paper hanging over the edges. This will help you lift out the bars later.

          Pour and Spread: Carefully pour the yogurt mixture into the prepared dish. Use a spatula to spread it evenly across the bottom and smooth out the top surface.

            Freeze: Cover the dish tightly with plastic wrap or a lid. Place it in the freezer and allow it to freeze for at least 4 to 6 hours, or until it is completely firm and solid.
