Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (for vegan option)

1/4 cup smooth almond butter

1 tablespoon pure vanilla extract

1/4 cup poppy seeds

1/2 cup slivered almonds

1/4 teaspoon fine sea salt

1/2 cup fresh or frozen blueberries (optional for added flavor)

1/4 cup unsweetened shredded coconut (optional for extra crunch)

Instructions

Prepare the Base: In a large mixing bowl, mix together the Greek yogurt, honey (or maple syrup), almond butter, vanilla extract, and sea salt. Whisk these ingredients together vigorously until the mixture is smooth and creamy, ensuring there are no lumps.

Incorporate the Dry Ingredients: Gently fold the poppy seeds and slivered almonds into the yogurt base using a rubber spatula. If you’re adding blueberries or shredded coconut, carefully fold these in as well, making sure to distribute them evenly throughout the mixture.

Line the Pan: Take an 8x8 inch square baking dish and line it with parchment paper, ensuring it covers the bottom and sides with some overhang. This will make it easier to lift out the bars later.

Spread the Mixture: Pour the yogurt mixture into the prepared baking dish. Using a spatula, spread the mixture evenly across the bottom of the pan. Smooth the top using the spatula for a neat finish.

Freeze Until Firm: Cover the baking dish with plastic wrap or a lid to prevent ice crystals. Place it in the freezer and allow it to freeze for at least 4 to 6 hours, or until the mixture is completely firm to the touch.

Slice into Bars: Once fully set, remove the dish from the freezer. Lift the mixture out using the parchment paper overhang. Place it on a cutting board and slice into bars or squares, depending on your preferred size.

Serve and Store: Enjoy the bars fresh from the freezer, or store any leftovers in an airtight container to keep them frozen. For a softer texture, let the bars sit at room temperature for a few minutes before serving.
