15 Medjool dates, pitted

1/2 cup almond butter (choose between smooth or crunchy)

1 cup Greek yogurt (plain or vanilla for extra flavor)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional, for drizzling)

1/4 cup chopped nuts (almonds, walnuts, or pecans for topping)

Instructions
 

Prepare the Dates: Carefully slice each pitted Medjool date lengthwise, making sure not to cut all the way through. Gently open them to create a pocket. Set them aside for later.

    Mix the Filling: In a medium mixing bowl, blend the almond butter, honey or maple syrup, vanilla extract, and sea salt. Stir the mixture until it’s completely smooth and well integrated, ensuring a creamy filling.

      Fill the Dates: Take a small spoon or piping bag and fill each opened date with the almond butter mixture. Be mindful not to overfill, as this will help keep things tidy and prevent spillage.

        Coat with Yogurt: Dip each filled date into the Greek yogurt, making sure each one is thoroughly coated. Allow any excess yogurt to drip off, then place the yogurt-covered dates onto a lined baking sheet.

          Freeze the Clusters: Lay the filled and yogurt-coated dates in a single layer on the baking sheet. Freeze for a minimum of 2 hours, or until the dates are completely firm to the touch.
