Frozen Watermelon Lime Popsicles

4 cups seedless watermelon, cubed

1/4 cup freshly squeezed lime juice (approximately 2-3 limes)

2 tablespoons honey or agave syrup (adjust according to the sweetness of the watermelon)

A pinch of salt

Optional: Zest from 1 lime (for an extra zing)

Instructions
 

Prepare the Watermelon: Begin by cutting the seedless watermelon into cubes and adding them to a blender. Blend on high speed until the mixture is completely smooth and creamy, ensuring no large chunks remain. You should end up with about 4 cups of smooth watermelon puree.

    Mix Ingredients: To the blender containing the watermelon puree, add the freshly squeezed lime juice, honey (or agave syrup), a pinch of salt, and lime zest if you'd like that extra burst of flavor. Blend again until all ingredients are well incorporated and the mixture is silky smooth.

      Taste Test: Before pouring the mixture into your molds, taste it! If you'd like it sweeter, add a little more honey or agave syrup. If you prefer more tartness, squeeze in additional lime juice. Blend again briefly to mix in any new ingredients.

        Pour into Molds: Carefully pour the watermelon-lime mixture into popsicle molds, leaving a small gap at the top of each mold to allow the popsicles to expand as they freeze. If there's any leftover mixture, consider pouring it into ice cube trays for refreshing flavored ice cubes.

          Insert Sticks: If your popsicle molds require sticks, insert them into the center of each filled mold. If your molds come with lids, securely place them on top to help hold the sticks in position.

            Freeze: Place the filled molds into the freezer and let them freeze for a minimum of 4 to 6 hours or until completely solid.

              Unmold: To release your delicious popsicles, run warm water over the outside of the molds for about 30 seconds. Alternatively, you can gently pull on the sticks to release them.
