Ingredients

2 cups fresh strawberries, hulled and roughly chopped

2 ripe kiwis, peeled and cut into thin slices

1 cup coconut yogurt (you can substitute with Greek yogurt)

1 cup coconut water (or any refreshing fruit juice of your choice)

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 tablespoon freshly squeezed lime juice

1 teaspoon pure vanilla extract

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Base: In a high-speed blender, combine the chopped strawberries, sliced kiwis, coconut yogurt, coconut water, honey (or maple syrup), lime juice, and vanilla extract. Blend on high until the mixture is completely smooth and well combined, ensuring all ingredients are evenly mixed.

Taste and Adjust: After blending, taste the mixture to check for sweetness. If you prefer a sweeter flavor, add more honey or maple syrup, blend again briefly to incorporate it fully.

      Layer Your Pops:

        - For a beautiful layered effect, begin by pouring half of the smoothie mixture into popsicle molds.

          - Next, add a layer of the thinly sliced strawberries and kiwis into each mold for texture and visual appeal.

            - Finally, pour the remaining smoothie mixture on top, filling each mold to the brim.

Insert Sticks: Carefully place popsicle sticks into the center of each mold, making sure they are straight and secure.

Freeze: Transfer the molds into the freezer and allow them to freeze for at least 6 to 8 hours, or until the popsicles are completely solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. This will help loosen them. Serve your popsicles immediately, garnished with fresh mint leaves for an extra touch of freshness.

Prep Time: 15 minutes | Total Time: 8 hours (including freezing) | Servings: 6 popsicles

                      - Presentation Tips: Serve the popsicles on a vibrant platter or in a glass dish to highlight their colorful layers, and consider garnishing with a few extra slices of fruit on the side for a delightful display!
