Ingredients

2 cups fresh or frozen strawberries, hulled and halved

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or flavored)

¼ cup chia seeds

½ cup almond milk (or your preferred milk)

A pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions

Blend Strawberries:

In a blender, combine the hulled and halved strawberries with honey or maple syrup and vanilla extract. Blend the mixture until smooth, ensuring to leave some small chunks of strawberries for added texture if preferred.

      Mix Yogurt and Chia Seeds:

In a medium-sized mixing bowl, add the Greek yogurt, chia seeds, almond milk, and a pinch of salt. Use a whisk or spatula to mix everything thoroughly until well combined and the chia seeds are evenly distributed throughout the yogurt.

          Layer the Mixture:

Select a square or rectangular baking dish (about 8x8 inches). Pour half of the blended strawberry mixture evenly into the bottom of the dish. Following this, carefully spread the yogurt and chia seed mixture over the fruit layer, ensuring an even distribution.

              Top it Off:

Pour the remaining strawberry blend over the yogurt layer, making sure to cover the entire surface area. For an appealing look, use a spatula to gently swirl the layers together, creating a marbled effect.

                  Freeze:

Transfer the baking dish to the freezer and let it chill for at least 4-6 hours, or until it is completely firm. After the first hour, consider covering the dish with plastic wrap to prevent any frost from developing on the surface.

                      Cut and Serve:

Once the mixture is fully frozen, remove the dish from the freezer. Allow it to sit at room temperature for 5-10 minutes to soften slightly for easier cutting. Use a sharp knife to slice the frozen treat into squares.

                          Garnish and Enjoy:

Serve the squares immediately, adding fresh mint leaves on top of each piece for a pop of color and freshness, if desired. Indulge in your refreshing and healthy treat!
