1 cup fresh strawberries, hulled and halved

8 oz cream cheese, softened to room temperature

1/2 cup powdered sugar

1 tsp pure vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted and slightly cooled

1/4 cup mini chocolate chips (optional)

Fresh mint leaves for garnish (optional)

Prepare the Strawberries: Start by rinsing the fresh strawberries under cold water. Remove the green tops (hull) and cut each strawberry in half. Set them aside in a bowl for later assembly.

    Make the Cheesecake Filling: In a medium mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until it reaches a smooth and creamy consistency. Gradually add in the powdered sugar, mixing well after each addition until fully incorporated. Finally, stir in the vanilla extract until the filling is fluffy and completely smooth.

      Create the Crust Mixture: In a separate bowl, combine the graham cracker crumbs with the melted butter, mixing until the crumbs are evenly coated and the texture resembles wet sand. This mixture will form the base of your bites.

        Assemble the Bites: Line a mini muffin pan with paper cupcake liners. Take approximately one tablespoon of the crust mixture and press it firmly into the bottom of each liner to create a solid base.
