Ingredients

2 cups ripe mango chunks (fresh or frozen)

1 cup canned coconut milk

½ cup unsweetened shredded coconut

3 tablespoons honey or maple syrup (adjust based on desired sweetness)

1 teaspoon pure vanilla extract

¼ teaspoon sea salt

1 tablespoon fresh lime juice

Optional toppings: Extra shredded coconut, crushed nuts, or cacao nibs

Instructions

Begin by placing the ripe mango chunks, canned coconut milk, honey (or maple syrup), vanilla extract, sea salt, and freshly squeezed lime juice into a blender or food processor.

Blend the mixture on high until it reaches a smooth and creamy consistency, pausing occasionally to scrape down the sides to ensure everything is well incorporated.

After achieving a homogenous mixture, add the unsweetened shredded coconut and pulse the blender a few times. This adds a delightful texture to your bliss bites!

Carefully transfer the mango-coconut mixture into a silicone mold or an ice cube tray, ensuring each compartment is filled about three-quarters full.

If desired, sprinkle additional shredded coconut or your choice of toppings over the mixture in each mold for an added crunch and visual appeal.

Place the filled mold in the freezer and allow the mixture to freeze for a minimum of 4 to 6 hours, or until each bite is completely solid.

Once the bites are fully frozen, gently remove them from the mold. Transfer the bliss bites to an airtight container for convenient storage.

Enjoy these delightful bites as a refreshing snack or dessert straight from the freezer for a tropical treat!
