2 large pink grapefruits

1 cup fresh-squeezed grapefruit juice (sourced from the grapefruits)

1 cup chilled sparkling water

1/4 cup honey or agave syrup (adjust based on desired sweetness)

Zest of 1 grapefruit

Fresh mint leaves, for an aromatic garnish

Optional: tonic water for an extra bubbly twist

Prepare the Grapefruits: Carefully cut the grapefruits in half horizontally. Use a spoon to gently scoop out the flesh, making sure to keep the rind intact as this will serve as your cups. Set the empty skins aside and place the grapefruit flesh into a blender.

    Blend the Juice: Blend the grapefruit flesh until it reaches a smooth consistency. To achieve a silky juice, strain the blended mixture through a fine-mesh sieve into a bowl, discarding any pulp.

      Mix the Ingredients: In a large mixing bowl, combine the freshly strained grapefruit juice, honey (or agave syrup), and grapefruit zest. Stir the mixture thoroughly until the sweetener is fully dissolved and well blended.

        Add Sparkle: Gradually pour in the chilled sparkling water, gently mixing to incorporate it while preserving the effervescence. Taste the mixture and if desired, adjust the sweetness by adding more honey or agave syrup.

          Fill the Cups: Carefully pour the refreshing grapefruit sparkle mixture into the hollowed grapefruit halves, filling them all the way to the top. Arrange the filled cups on a tray to keep them stable.

            Freeze: Cover each filled grapefruit cup with plastic wrap and place them in the freezer. Allow to freeze for at least 4 hours or until completely solid.
