Ingredients

8 oz. fusilli pasta (or your preferred pasta shape)

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

Optional: 1/4 cup pine nuts, toasted for an added crunch

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fusilli pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and rinse it under cold running water to halt the cooking process. Let it cool completely and set aside.

Prepare the Dressing: In a small mixing bowl, combine the extra virgin olive oil, balsamic vinegar, garlic powder, a pinch of salt, and freshly ground black pepper. Whisk until the ingredients are thoroughly blended into a smooth dressing.

Combine Ingredients: In a large mixing bowl, add the cooled fusilli pasta, halved cherry tomatoes, and bocconcini. Gently fold in the torn basil leaves. If you opted for pine nuts, now is the time to add them for an extra layer of texture and flavor.

Dress the Salad: Drizzle the prepared dressing over the pasta mixture. With a spatula or large spoon, gently toss all ingredients together until every piece is well-coated with the dressing.

Taste and Adjust: After tossing, take a moment to taste the salad. Adjust the flavor as needed by adding more salt, freshly cracked pepper, or a splash more of balsamic vinegar to achieve your desired taste.

Chill: Cover the bowl with plastic wrap or a lid, and place the salad in the refrigerator. Allow it to chill for at least 30 minutes; this will help meld the flavors beautifully.

Serve: Once chilled, serve the Caprese Pasta Salad either straight from the refrigerator or at room temperature. For an added touch, garnish with extra fresh basil leaves. Enjoy this vibrant dish that’s perfect for gatherings or as a light meal!
