2 tablespoons unsalted butter (melted)

2 1/2 cups all-purpose flour (plus extra for dusting)

For the Filling:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter (softened)

For the Glaze (optional):

1 cup powdered sugar

1-2 tablespoons milk (to achieve desired consistency)

1/2 teaspoon vanilla extract

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). Bake or steam the sweet potato until tender, approximately 40-50 minutes. Once cooked, allow it to cool, peel, and mash or puree until completely smooth.

    Activate the Yeast: In a small bowl, combine the warm milk and granulated sugar. Sprinkle the instant yeast over the mixture and let it rest for about 5-10 minutes, or until it becomes frothy and bubbly.

      Combine Liquid Ingredients: In a large mixing bowl, mix the sweet potato puree with the melted butter. Add the activated yeast mixture, salt, ground cinnamon, and nutmeg. Stir until all ingredients are well combined and smoothly blended.

        Incorporate the Flour: Gradually add the all-purpose flour, one cup at a time. Mix with a wooden spoon or a dough hook attachment if using a stand mixer.
