1.5 lbs boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium yellow bell pepper, sliced into strips

1 medium green bell pepper, sliced into strips

4 cloves garlic, minced

Juice of 2 fresh limes

Zest of 1 lime

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Tortillas for serving (flour or corn, your preference)

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine the sliced chicken with olive oil, lime juice, lime zest, ground cumin, smoked paprika, chili powder, and a generous sprinkle of salt and pepper. Mix thoroughly until all the chicken strips are coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or for optimal flavor, marinate for up to 2 hours.

      Prep the Veggies:
