1 teaspoon chili powder

Juice of 2 limes (about ¼ cup)

Zest of 1 lime

Salt and black pepper, to taste

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 medium onion, sliced into thin wedges

Fresh cilantro leaves, for garnish

Marinate the Chicken: In a spacious mixing bowl, combine the chicken strips with 2 tablespoons of olive oil, chopped jalapeños, minced garlic, ground cumin, smoked paprika, chili powder, lime juice, lime zest, and a generous pinch of salt and pepper. Mix well to ensure each piece of chicken is fully coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to infuse.     Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
