1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Sliced jalapeƱos (optional)

Instructions

Marinate the Shrimp: In a mixing bowl, whisk together olive oil, chili powder, ground cumin, garlic powder, lime juice, salt, and pepper until well blended. Add the peeled and deveined shrimp, tossing gently to ensure they are thoroughly coated in the marinade. Allow the shrimp to marinate for 10-15 minutes while you prepare the slaw.

Prepare the Slaw: In a large bowl, combine shredded green cabbage, red cabbage, grated carrots, and chopped cilantro. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, and a pinch of salt and pepper until smooth. Drizzle this dressing over the cabbage mixture and toss until all the vegetables are evenly coated. Set the slaw aside to let the flavors meld.

Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the skillet from heat and set the cooked shrimp aside.

Warm the Tortillas: In a separate skillet or directly over a gas stove flame, warm the tortillas for about 30 seconds on each side until they are soft and pliable. This will enhance their flavor and texture.

Assemble the Tacos: On each warm tortilla, place a generous scoop of the vibrant slaw, followed by a few pieces of the cooked shrimp. Garnish with additional cilantro and sliced jalapeƱos if you like a bit of heat. Finish with a squeeze of fresh lime juice for an added zesty kick.

Serve: Present your shrimp tacos immediately with lime wedges on the side, allowing each person to tailor their tanginess to their liking. Enjoy your delicious fiesta!
