2 medium butternut squashes (about 2 pounds), peeled and thinly sliced into rounds

1 large yellow onion, thinly sliced

2 cloves garlic, minced

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese (plus 1/2 cup for topping)

1 cup grated Parmesan cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1/2 teaspoon ground nutmeg

Salt and pepper, to taste

1 cup breadcrumbs (preferably panko for an extra crunch)

2 tablespoons olive oil

1 tablespoon unsalted butter, for greasing the baking dish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a 9x13 inch baking dish thoroughly with unsalted butter to prevent sticking.

    Prepare the Squash: In a large mixing bowl, take the sliced butternut squash and season it generously with salt, pepper, and the ground nutmeg. Toss the slices until they are evenly coated with the seasonings, ensuring a flavorful base for your gratin.

      Sauté the Onion and Garlic: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onion and sauté, stirring occasionally, until it becomes soft and translucent, which should take about 5-7 minutes. Once the onions are ready, stir in the minced garlic and continue cooking for another 1-2 minutes until the garlic is fragrant. Once done, remove the skillet from the heat and set aside.

        Make the Cheese Sauce: In a medium saucepan set over low heat, combine the heavy cream and whole milk, stirring gently. Gradually incorporate 1 1/2 cups of the shredded cheddar cheese along with all of the grated Parmesan cheese into the mixture.
