1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 cloves garlic, minced

Salt and pepper, to taste

Olive oil, for drizzling

    Prepare the Zucchini: On a clean cutting board, utilize a mandoline slicer or a sharp knife to cut the zucchinis into thin, even rounds, about ¼ inch thick. For optimal texture, you may sprinkle the slices with a pinch of salt and let them sit for approximately 15 minutes to extract excess moisture. Afterward, pat them dry with paper towels to remove any water.

      Make the Cheese Mixture: In a medium mixing bowl, combine the ricotta cheese, half of the shredded mozzarella (½ cup), grated Parmesan cheese, minced garlic, Italian seasoning, and a dash of salt and pepper. Mix the ingredients thoroughly until you achieve a smooth and well-blended cheese mixture.
