Ingredients

2 (6 oz) salmon fillets

1 cup uncooked jasmine rice

1 ½ cups water

1 cup broccoli florets

1 cup snap peas

½ cup shredded carrots

3 green onions, chopped

¼ cup teriyaki sauce (store-bought or homemade)

2 tablespoons sesame oil

1 tablespoon olive oil

1 tablespoon sesame seeds (optional)

Salt and pepper, to taste

Instructions

Cook the Rice: Begin by rinsing the jasmine rice under cold water. Continue rinsing until the water runs clear, ensuring any excess starch is washed away. In a medium saucepan, combine the rinsed rice and 1 ½ cups of water. Bring this mixture to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and all the water is absorbed. After the cooking time, remove from heat while keeping it covered for an additional 5 minutes to allow the rice to steam and become fluffy.

Prepare the Vegetables: Heat a large skillet over medium heat and add the olive oil. When the oil is shimmering, add the broccoli florets and snap peas. Sauté the vegetables for approximately 3-4 minutes until they begin to soften yet remain vibrant. Next, stir in the shredded carrots along with a pinch of salt and pepper. Cook for an additional 2 minutes, allowing the vegetables to become tender but still crisp. Once cooked, remove the skillet from the heat and set the vegetables aside.

Cook the Salmon: In the same skillet you used for the vegetables, pour in the sesame oil and place the salmon fillets skin-side down. Cook the fillets for about 4-5 minutes over medium-high heat, or until the skin is golden brown and crispy. Carefully flip the salmon using a spatula, and brush the tops with half of the teriyaki sauce. Cook for an additional 4-5 minutes or until the salmon is fully cooked and flakes easily with a fork. (Note: Adjust cooking times as needed based on the thickness of your fillets.)

Assemble the Bowls: Fluff the jasmine rice with a fork, then divide it evenly among two serving bowls. Top each bowl generously with the sautéed vegetables and place a salmon fillet on top of each. Drizzle the remaining teriyaki sauce over both the salmon and the vegetables, enhancing their flavor.

Garnish: Finish by sprinkling the chopped green onions and sesame seeds (if using) over the bowls for added flavor and crunch. Serve immediately and relish in the delicious blend of teriyaki salmon and vibrant vegetables!
