4 medium bell peppers (any color of your choice)

1 lb ground turkey

1 cup cooked quinoa (or substitute with rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (choose cheddar or mozzarella)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This step ensures your oven is hot and ready for baking.

    Prepare the Bell Peppers: Carefully cut the tops off the bell peppers and remove the seeds and membranes from the inside. If needed, slice a tiny bit off the bottom so that they can sit upright without tipping over (be cautious not to cut through to create a hole).

      Cook the Ground Turkey: In a large skillet, heat a drizzle of olive oil over medium heat. Once the oil is shimmering, add the finely chopped onion and sauté for about 3-4 minutes, or until the onions become translucent. Add the minced garlic and sauté for an additional minute, stirring frequently to prevent burning.

        Add Turkey and Seasoning: Increase the heat to medium-high, then add the ground turkey to the skillet. Season the mixture with Italian seasoning, smoked paprika, salt, and pepper. Cook while breaking apart the turkey with a spatula, about 6-8 minutes, until the turkey is thoroughly cooked and no longer pink.

          Combine the Filling: Once the turkey is fully cooked, stir in the drained diced tomatoes and cooked quinoa. Allow the mixture to cook together for an additional 3-4 minutes, letting the flavors meld and intensify.

            Stuff the Peppers: Carefully spoon the savory turkey mixture into each bell pepper, pressing down gently to pack the filling in firmly. Arrange the stuffed peppers upright in a baking dish to prevent tipping during baking.
