1 cup frozen peas and carrots mix

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

2 large eggs, beaten

3 tablespoons soy sauce (adjust to taste)

1 tablespoon sesame oil

2 green onions, finely chopped

Salt and pepper to taste

Preparation: Begin by ensuring your cooked jasmine rice is chilled. This step is crucial for preventing the rice from clumping together when frying. If you haven't already prepared the rice, it's ideal to cook it several hours in advance or the day prior and refrigerate it.

    Cook the Shrimp: Heat 1 tablespoon of vegetable oil over medium-high heat in a large skillet or wok. Add the shrimp, seasoning them lightly with salt and pepper. Cook for approximately 2-3 minutes on each side, or until the shrimp have turned pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside on a plate.

      Scramble the Eggs: Using the same skillet, pour in the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds, or until fragrant, ensuring it doesn’t burn. Next, pour in the beaten eggs and scramble them for 1-2 minutes until they are fully cooked. Once done, push the scrambled eggs to one side of the skillet.

        Combine Ingredients: On the other side of the skillet, add the frozen peas and carrots, allowing them to mix with the scrambled eggs. Gradually fold in the chilled cooked rice, breaking apart any clumps and ensuring the mixture is well combined.
