200g pork tenderloin or pork shoulder, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

2 tablespoons vegetable oil (divided)

2 large eggs, lightly beaten

1 cup frozen peas and carrots (or any mixed vegetables)

3 green onions, chopped (keep white and green parts separated)

2 cloves garlic, minced

Salt and pepper to taste

Marinate the Pork: In a medium bowl, thoroughly mix together the sliced pork, soy sauce, and oyster sauce. Cover the bowl and let it marinate for at least 15 minutes. This will infuse the pork with rich flavor.

      Scramble the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the beaten eggs and let them cook without stirring for a few moments. Once the edges begin to set, scramble until just cooked through. Remove the eggs from the pan and set them aside.
