1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 can (14 oz) diced tomatoes (with juices)

2 cups vegetable broth (or chicken broth)

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for a touch of heat)

½ cup heavy cream (or coconut cream for a dairy-free option)

1 cup shredded mozzarella cheese (or vegan cheese for a dairy-free option)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it turns translucent and soft. Next, add the minced garlic and continue to sauté for an additional minute until it becomes fragrant, taking care not to let it burn.

    Combine Ingredients: Pour in the can of diced tomatoes (including all the juices), followed by the vegetable broth. Add the dried basil, dried oregano, and red pepper flakes (if you prefer a little heat). Stir everything together until well combined.
