Ingredients

For the Pasta:

12 oz (340g) elbow macaroni or penne

4 cups water

1 tsp salt

For the Tomato Layer:

1 cup marinara sauce (store-bought or homemade)

1 cup diced fresh tomatoes (about 2 medium tomatoes)

1 tsp Italian seasoning

1/2 tsp garlic powder

Fresh basil leaves for garnish

For the Vanilla Layer:

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

1 tsp pure vanilla extract

2 tbsp granulated sugar

Pinch of salt

For the Chocolate Layer:

1 cup chocolate pudding (store-bought or homemade)

1/2 cup mini chocolate chips

Optional: whipped cream for serving

Instructions

Cook the Pasta:

    - In a large pot, bring 4 cups of water to a vigorous boil. Add 1 tsp of salt, then carefully stir in the elbow macaroni. Cook according to the package instructions until al dente, usually about 8-10 minutes. Once done, drain the pasta and set aside in a large bowl.

      Prepare the Tomato Layer:

        - In a large mixing bowl, combine the marinara sauce, diced fresh tomatoes, Italian seasoning, and garlic powder. Stir well until the ingredients are evenly mixed. Set aside this flavorful mixture.

          Prepare the Vanilla Layer:

            - In another bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, heavy cream, vanilla extract, sugar, and a pinch of salt. Using a whisk or spatula, mix until the mixture is smooth and creamy. Ensure there are no lumps for the best texture.

              Prepare the Chocolate Layer:

                - In a separate bowl, add the chocolate pudding. Gently fold in the mini chocolate chips, ensuring they are evenly distributed without breaking apart. Set aside.

                  Assemble the Bake:

                    - Preheat your oven to 350°F (175°C).

                      - Lightly grease a 9x13 inch baking dish with cooking spray or a little oil. Begin by pouring the tomato layer into the bottom of the dish, spreading it out evenly with a spatula.

                        - Next, layer the cooked pasta evenly over the tomato sauce, pressing down gently.

                          - Pour the vanilla cheese mixture over the pasta and spread it out evenly with a spatula.

                            - Finally, dollop the chocolate pudding layer on top, smoothing it with a spatula to cover the entire surface of the dish.

                              Bake:

                                - Place the assembled pasta bake in the preheated oven and bake for 25-30 minutes, or until the edges are bubbling and the top layer is nicely set.

                                  Cool and Serve:

                                    - Once baked, remove the dish from the oven and allow it to cool for about 10 minutes. This will help the layers set for easier serving.

                                      - Garnish with fresh basil leaves to add a pop of color and flavor. Serve warm or at room temperature, with optional whipped cream on the side for an extra delightful treat.
