12 oz penne pasta

1 lb Italian sausage (choose either sweet or spicy)

2 tbsp olive oil

1 medium onion, thinly sliced

2 bell peppers (1 red and 1 yellow), sliced into strips

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, including juices

1/2 cup chicken broth or use white wine for a different flavor

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional for extra heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside, making sure to reserve about 1 cup of the pasta water for later use.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula as it cooks. Sauté until the sausage is nicely browned and cooked through, about 6 to 8 minutes. Once done, remove the sausage from the skillet and set aside, allowing any excess grease to drain.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the sliced onion and bell peppers, cooking for approximately 5 to 7 minutes until they are softened and beginning to caramelize. Stir in the minced garlic and continue to sauté for an additional minute until fragrant.

        Combine Ingredients: Return the cooked sausage to the skillet with the sautéed vegetables. Pour in the diced tomatoes along with their juices, and add the chicken broth (or white wine), Italian seasoning, and red pepper flakes if desired. Stir everything together and let it simmer for 5 to 10 minutes, allowing the flavors to meld beautifully.

          Mix in Pasta: Gently fold the cooked penne pasta into the skillet. If the dish appears too dry, gradually mix in some reserved pasta water, a few tablespoons at a time, until the desired creamy consistency is achieved. Toss everything to evenly coat the pasta with the sauce.
