Ingredients

2 cups cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)

1 cup cream of chicken soup (store-bought or homemade)

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1/2 teaspoon freshly ground black pepper

2 cups biscuit mix (such as Bisquick)

1 cup milk

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it is hot when the casserole is ready to bake.

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded or diced cooked chicken with the frozen mixed vegetables. Add in the cream of chicken soup and chicken broth, followed by the garlic powder, onion powder, dried thyme, and black pepper. Mix everything together until well blended.

Transfer to Casserole Dish: Take a 9x13 inch casserole dish and grease it lightly. Pour the chicken and vegetable mixture into the dish, spreading it out evenly across the bottom.

Make Biscuit Batter: In a separate bowl, whisk together the biscuit mix and milk. Stir until just combined; it's okay if the batter has some small lumps—avoid over-mixing for a fluffier topping.

Add Biscuit Topping: Carefully spoon the biscuit mixture over the chicken filling in the casserole dish. Try to cover the whole surface as evenly as possible for even cooking.

Sprinkle Cheese: Top the biscuit batter with the shredded cheddar cheese, spreading it out evenly for a cheesy, golden finish.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes. You’re looking for the biscuit topping to be golden brown and the filling to be bubbling around the edges.

Cool and Garnish: Once baked, remove from the oven and let it cool for a few minutes. If you’d like, garnish with fresh chopped parsley to add a burst of color and freshness.

Serve: Dish out generous portions while warm and enjoy this comforting casserole with your loved ones!
