1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup coconut milk

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp brown sugar

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp ground coriander

1/2 tsp turmeric powder

Zest and juice of 1 lime

2 green onions, finely chopped

Fresh cilantro, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling)

Prepare the Marinade: In a spacious mixing bowl, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, freshly grated ginger, ground coriander, turmeric powder, lime zest, and lime juice. This flavorful concoction will serve as a delicious marinade for the chicken.
