Easy Creamy Tomato Basil Soup

1 medium onion, diced

3 cloves garlic, minced

2 cans (14 oz each) whole peeled tomatoes (preferably San Marzano)

3 cups vegetable broth

1 teaspoon sugar (to balance acidity)

1 cup heavy cream (or coconut milk for a vegan option)

1/2 cup fresh basil leaves, chopped

Salt and pepper, to taste

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5-7 minutes, stirring occasionally, until the onion becomes translucent and soft. Then, add the minced garlic and cook for an additional 1-2 minutes, stirring until the garlic is fragrant and slightly golden.

    Add the Tomatoes: Pour the canned whole peeled tomatoes into the pot along with their juices. Using a wooden spoon, gently break up the tomatoes into smaller pieces. Allow them to cook for 2-3 minutes, stirring occasionally, which will help the flavors start to blend.

      Incorporate the Broth: Add the vegetable broth and the teaspoon of sugar to the pot. Stir everything together to combine well. Increase the heat slightly until the mixture reaches a gentle simmer. Allow it to simmer uncovered for about 20 minutes, stirring occasionally to encourage the flavors to deepen and develop.

        Blend the Soup: After simmering, remove the pot from heat. If using an immersion blender, carefully blend the soup directly in the pot until it reaches a smooth consistency. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender and blend until smooth, then return it to the pot.

          Make It Creamy: If you used a countertop blender, return the pureed soup to the pot. Stir in the heavy cream or coconut milk (depending on your dietary preference) and heat over low for about 5 minutes, stirring occasionally until warmed through.

            Season and Add Basil: Remove the pot from heat once the soup is warmed. Stir in the freshly chopped basil and taste the soup. Adjust the seasoning with salt and pepper as desired.
