4 large flour tortillas

2 cups shredded cheese (options include cheddar, Monterey Jack, or a blend of both)

Prep the Chicken: In a mixing bowl, add the sliced chicken. Sprinkle over the fajita seasoning along with salt and pepper. Mix well until the chicken pieces are thoroughly coated with the seasoning blend.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink in the center. Once cooked, transfer the chicken to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for 3-4 minutes, stirring frequently, until the vegetables are tender and slightly caramelized. Once softened, return the cooked chicken to the skillet and combine everything together, allowing the flavors to meld.

        Prepare Quesadillas: On a clean flat surface, take one tortilla and lay it down. Sprinkle half of the shredded cheese evenly over one half of the tortilla. Add a generous portion of the chicken and veggie mixture on top, then sprinkle the remaining cheese over the filling.
