1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp each of cumin, paprika, and chili powder, plus 1/2 tsp salt)

1 can (15 oz) black beans, drained and rinsed

1/2 cup beef broth (or water)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

1/2 cup sour cream

1 avocado, sliced (optional)

Fresh cilantro, chopped, for garnish (optional)

Lime wedges for serving

Cook the beef: In a large skillet, drizzle a bit of olive oil and heat it over medium heat. Add the finely diced onion and sauté for about 2-3 minutes, or until it becomes translucent. Next, stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant but not browned.

    Brown the meat: Increase the heat to medium-high. Add the ground beef to the skillet and use a wooden spoon to break it apart. Cook for approximately 5-7 minutes until the meat is fully browned. If there's a lot of fat rendered, carefully drain the excess to keep the mixture from becoming greasy.

      Season it up: Sprinkle the taco seasoning evenly over the browned beef, stirring to combine. Pour in the beef broth (or water) and mix thoroughly. Allow this mixture to simmer on low heat for about 5 minutes, stirring occasionally, until it thickens slightly.
