1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz / 425g) refried beans

1 can (10 oz / 284g) enchilada sauce (choose between red or green)

1 cup (100g) shredded cheddar cheese

8 small flour tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Preheat Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

    Cook Beef: In a large skillet set over medium heat, add the ground beef. Sauté the beef for about 5-7 minutes, stirring occasionally, until it is browned and thoroughly cooked. Once done, carefully drain any excess fat from the skillet.

      Sauté Onions and Garlic: To the skillet with the browned beef, add the finely chopped onion and minced garlic. Cook for approximately 3-5 minutes, stirring frequently, until the onions become soft and translucent.

        Season the Mixture: Stir in the refried beans along with the ground cumin, chili powder, salt, and pepper. Mix everything together thoroughly, allowing it to cook for an additional 2-3 minutes until the mixture is heated through.

          Fill the Tortillas: On a flat surface, take a flour tortilla and spoon about 1/4 cup of the beef mixture into the center. Sprinkle a small amount of shredded cheddar cheese on top, then carefully roll up the tortilla tightly to secure the filling. Repeat this process with the remaining tortillas.

            Prepare for Baking: Spread 1/2 cup of enchilada sauce evenly across the bottom of a 9x13 inch (23x33 cm) baking dish. Place the rolled tortillas seam-side down in the dish, ensuring they are close together but not overcrowded.
