1 medium onion, finely diced

3 cloves garlic, minced

1 can (15 oz) kidney beans, drained and thoroughly rinsed

1 can (15 oz) black beans, drained and thoroughly rinsed

1 can (14.5 oz) diced tomatoes, including their juices

2 tbsp tomato paste

2 cups beef stock (homemade or low sodium)

2 tsp chili powder (adjust for spice preference)

1 tsp ground cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and freshly cracked black pepper to taste

2 tbsp olive oil (or any cooking oil of your choice)

Optional toppings: shredded cheese (cheddar or pepper jack), sour cream, finely chopped green onions, fresh cilantro leaves

Sauté the Vegetables: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper.
