Ingredients

2 large cucumbers, peeled and roughly chopped

2 ripe avocados, pitted and scooped out

1 cup Greek yogurt (or your favorite dairy-free alternative)

1 cup vegetable broth, well-chilled

2 tablespoons fresh lime juice

1 garlic clove, minced

1 tablespoon fresh mint leaves, finely chopped (plus additional mint for garnish)

1 tablespoon extra-virgin olive oil

Salt and freshly ground pepper to taste

Optional: radish slices for garnish

Instructions

Prepare the Base: In a high-speed blender, combine the chopped cucumbers, the flesh of the avocados, Greek yogurt, chilled vegetable broth, fresh lime juice, and minced garlic. Blend on high until the mixture is smooth and creamy, stopping to scrape down the sides as needed to ensure everything is well incorporated.

Add Flavor: With the blender still running, slowly drizzle in the olive oil, allowing it to fully blend into the mixture. Next, add the chopped mint leaves and season with salt and freshly ground pepper to taste. Blend for an additional 10-15 seconds until the mint is well distributed.

Chill the Soup: Pour the blended soup into a large bowl or airtight container. Cover securely and refrigerate for at least 1 hour. This chilling time helps the flavors meld beautifully and makes the soup delightfully refreshing.

Serve: After chilling, give the soup a gentle stir. Ladle it into individual bowls and garnish each serving with a sprinkle of extra chopped mint and a few radish slices for a beautiful pop of color and crunch.

Enjoy: Serve immediately and relish in the refreshing, cool flavors of this creamy soup that’s perfect for warm days!
