Ingredients

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons extra virgin olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

½ cup your favorite BBQ sauce

4 large whole wheat tortillas or wraps

1 cup shredded romaine lettuce

1 cup diced ripe tomatoes

½ cup diced red onion

½ cup shredded cheese (optional; use vegan cheese if desired)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Season the Chickpeas: In a medium mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, and a generous pinch of salt and pepper. Stir thoroughly until every chickpea is well-coated in the spice mixture.

Roast the Chickpeas: Spread the spiced chickpeas in a single layer on the lined baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and crunchy. Be sure to stir the chickpeas halfway through cooking for even roasting.

Incorporate BBQ Sauce: Once roasted, remove the chickpeas from the oven and allow them to cool for a few minutes. Drizzle your BBQ sauce over the warm chickpeas and gently toss to coat them evenly.

Assemble the Wraps: Take a tortilla and lay it flat on a clean, dry surface. Start layering by placing a generous handful of shredded romaine lettuce in the center. Follow with diced ripe tomatoes, red onion, and a scoop of the BBQ-coated chickpeas. If using cheese, sprinkle a generous amount on top.

Roll the Wraps: To secure your fillings, fold the sides of the tortilla inward and then roll it tightly from the bottom to the top. This ensures that all the delicious fillings are snug inside. Repeat this for the remaining tortillas.

Serve and Enjoy: Slice each wrap in half diagonally for presentation and serve alongside extra BBQ sauce for dipping. Garnish with freshly chopped cilantro or parsley for a pop of color and flavor, if desired.
