1 medium carrot, sliced into thin sticks

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup green beans, trimmed and halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

¾ cup whole-wheat breadcrumbs (or panko for extra crunch)

¼ cup grated Parmesan cheese (optional for added flavor)

Fresh parsley, chopped (for garnish)

Prep the Veggies: Start by thoroughly washing all your vegetables. Once clean, slice the zucchini and carrot into thin sticks, and cut the red and yellow bell peppers into thin strips. Prepare the green beans by trimming their ends and cutting them in half.

    Make the Coating: In a large mixing bowl, pour in the olive oil. Add the garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to combine the ingredients into a flavorful marinade.

      Coat the Veggies: Add the sliced vegetables into the bowl with the marinade. Toss them gently but thoroughly until each piece is evenly coated in the seasoning.

        Prepare the Breading: In a separate bowl, combine the whole-wheat breadcrumbs with the grated Parmesan cheese (if you're using it). Mix until evenly distributed.
