Prepare the Eggplant: Start by salting the eggplant slices. Place the rounds in a single layer on a baking sheet or clean work surface, and generously sprinkle both sides with salt. Allow them to sit for about 30 minutes; this process draws out excess moisture and reduces bitterness. After 30 minutes, rinse the slices under cold running water to remove the salt, then carefully pat them dry with paper towels.

    Create the Breading Station: In a shallow bowl, whisk together the eggs and olive oil until well blended. In a separate shallow bowl, mix the Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, and season with salt and pepper. Ensure the breadcrumb mixture is thoroughly combined for even flavor.

      Coat the Eggplant: Take each eggplant slice and dip it into the egg mixture, allowing any excess to drip back into the bowl.
