4 large tortillas (choose flour or whole wheat based on preference)

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup chopped cooked bacon or sausage (your choice)

1 cup diced bell peppers (mix of red and green for color)

1/2 cup diced onions

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

Cooking spray (for the air fryer)

Prep the Filling: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined. Heat the olive oil in a skillet over medium heat. Once hot, add the diced onions and bell peppers. Sauté for about 3-4 minutes, or until the vegetables have softened. Pour in the egg mixture, stirring frequently, and cook until the eggs are fully scrambled and no longer runny. Remove from heat and set aside.

    Combine Ingredients: Stir the chopped bacon or sausage into the scrambled eggs until evenly distributed. Add the shredded cheddar cheese and fold gently until the cheese is melted and everything is thoroughly mixed.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon an equal portion of the egg mixture into the center of each tortilla. Fold the sides inward, then roll the tortilla tightly from the bottom up to enclose the filling completely. Repeat this process with the remaining tortillas.

        Prepare for Air Frying: Preheat your air fryer to 380°F (193°C). Lightly spray the air fryer basket with cooking spray to prevent sticking. Brush the outer surface of each wrap with a small amount of olive oil. This will help achieve a beautifully golden-brown, crunchy texture.

          Air Fry the Wraps: Carefully place the wraps seam-side down into the air fryer basket. If your air fryer is small, cook the wraps in batches. Air fry for approximately 8-10 minutes, or until they are golden and crispy, giving them a flip halfway through for even browning.

            Serve: Remove the wraps from the air fryer and allow them to cool slightly for a couple of minutes. Slice each wrap in half and serve warm with your choice of dipping sauces, such as salsa, sour cream, or guacamole.
