2 medium zucchinis

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1/2 cup mayonnaise

2 cloves garlic, finely minced

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

    Prepare Zucchini: Rinse and dry the zucchinis thoroughly. Using a mandoline slicer or a sharp knife, cut the zucchinis into thin slices, approximately 1/8 inch thick. Place the slices into a large mixing bowl.

      Season Zucchini: In a separate small mixing bowl, combine the olive oil, garlic powder, onion powder, dried oregano, dried thyme, paprika, salt, pepper, and cayenne pepper (if you like it spicy). Pour this seasoning mixture over the zucchini slices, and gently toss to ensure all the slices are evenly coated with the flavorful oil and spices.
