12 oz. penne pasta

1 can (15 oz.) pumpkin puree

2 cups vegetable broth

1 cup heavy cream

1 medium onion, finely diced

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried sage

½ tsp ground nutmeg

½ tsp salt

¼ tsp freshly ground black pepper

1 cup grated Parmesan cheese

1 cup fresh spinach, chopped (optional)

Fresh parsley, chopped, for garnish

Prepare the Base: In the bottom of your crockpot, add the pumpkin puree, vegetable broth, heavy cream, diced onion, minced garlic, dried thyme, dried sage, ground nutmeg, salt, and black pepper. Stir thoroughly until all ingredients are completely combined and the mixture is smooth.

    Add the Pasta: Carefully add the uncooked penne pasta directly into the pumpkin mixture in the crockpot. Gently push the pasta down to ensure it is fully submerged in the sauce, which will help it cook evenly.
