Ingredients

2 medium zucchinis

1 cup panko breadcrumbs (for extra crunch)

½ cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (for added depth)

½ teaspoon salt

¼ teaspoon freshly ground black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray or a drizzle of olive oil

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To ensure easy cleanup and to help the fries become crispier, line a baking sheet with parchment paper.

Prepare the Zucchini: Rinse the zucchinis under cold water and pat them dry with a paper towel. Cut each zucchini in half crosswise, then slice each half into long wedges, resembling the shape of fries. Make sure the pieces are similar in size for even cooking.

Set Up Breading Stations: Prepare a breading station by placing the all-purpose flour in one shallow bowl. In a second bowl, crack and beat the eggs until smooth. In a third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper, mixing everything well.

Bread the Zucchini: Take one zucchini wedge and start by dredging it in the flour, making sure to shake off any excess. Dip the floured wedge into the beaten eggs, allowing any extra egg to drip off, and finally, coat it in the breadcrumb mixture. Press gently to ensure the coating sticks. Repeat this process for all zucchini wedges.

Arrange on Baking Sheet: Place the breaded zucchini fries in a single layer on the lined baking sheet. Make sure to leave space between each fry to promote even cooking and crispiness.

Spray and Bake: Lightly spray the tops of the zucchini fries with cooking spray or drizzle with olive oil, as this will help them develop a beautiful golden crust. Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

Serve and Enjoy: Once baked, remove the zucchini fries from the oven and let them cool for a few minutes. Serve them hot, optionally garnished with additional grated Parmesan cheese and your favorite dipping sauces, such as marinara or ranch. Enjoy every delicious, crunchy bite!
