1 lb (about 450g) large carrots, peeled and sliced into fry shapes

1/2 cup finely grated Parmesan cheese

1/2 cup panko breadcrumbs for an extra crunchy texture

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika for a hint of warmth

1/4 teaspoon freshly ground black pepper

1/2 teaspoon sea salt

Fresh parsley, chopped (for a vibrant garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To simplify cleanup, line a large, rimmed baking sheet with parchment paper.

    Prepare the Carrots: In a large mixing bowl, add the peeled and cut carrot fries. Drizzle with the extra virgin olive oil and toss vigorously until every piece is evenly coated with oil.

      Mix the Coating: In a separate bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and sea salt. Stir the ingredients well until they form a uniform coating mixture.

        Coat the Carrots: Working in batches, take a handful of the carrot fries and immerse them in the breadcrumb mixture, pressing gently to ensure they're well coated on all sides. Arrange the coated fries in a single layer on the prepared baking sheet, leaving space between each piece for even cooking.
