2 ripe avocados

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

1/4 teaspoon salt

1/2 cup all-purpose flour

2 large eggs

Cooking spray or a drizzle of olive oil

Fresh cilantro leaves and lime wedges for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Avocados: Carefully slice the avocados in half, remove the pit, and scoop out the flesh with a spoon. Cut each avocado half into 4-6 wedges, based on how thick you prefer your fries. Set these wedges aside.

      Create the Breading Station:

        - In a shallow dish, pour in the all-purpose flour.

          - In another shallow dish, crack the eggs and whisk them until smooth and well combined.

            - In a third dish, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Stir until fully combined.

              Coat the Avocado Wedges: Taking one avocado wedge at a time, first dredge it in the flour, ensuring to shake off any excess. Next, dip it into the beaten eggs, allowing the extra egg to drip back into the bowl. Finally, roll the wedge in the panko-Parmesan mixture, pressing gently to ensure a good coating. Repeat this process for all avocado wedges.

                Arrange on Baking Sheet: Place the coated avocado wedges in a single layer on the prepared baking sheet. To help them crisp up nicely, lightly spray or drizzle olive oil over the top of the fries.

                  Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the wedges turn a lovely golden brown and become crispy. Flip the fries halfway through the baking time for even crispness.
