8 oz (225g) fresh mozzarella cheese, cut into 1-inch cubes

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper, to taste

Vegetable or canola oil, for frying

Marinara sauce, for dipping (optional)

Prep the Cheese: Begin by cutting the fresh mozzarella into cubes that are approximately 1 inch in size. Arrange these cubes on a plate and place them in the freezer for about 30 minutes, allowing them to firm up without completely freezing. This step helps keep the cheese intact while frying.

    Setup the Breading Station: Prepare your breading station by arranging three separate bowls:

      - In the first bowl, place the all-purpose flour and season it with a pinch of salt and fresh ground pepper for added flavor.

        - In the second bowl, crack the eggs and beat them until smooth and fully combined.

          - In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, dried basil, and a bit of salt and pepper. Mix thoroughly to ensure an even seasoning throughout.

            Coat the Mozzarella: Once the cheese cubes are firm, take each one out of the freezer. Begin by coating a cube in the seasoned flour, shaking off any excess. Next, dip it into the beaten eggs, ensuring it is completely coated. Finally, roll the cube in the breadcrumb mixture, gently pressing so that the breadcrumbs adhere well. Repeat this process for all mozzarella cubes.

              Heat the Oil: In a deep skillet or pot, pour enough oil to submerge the bites by about 2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C). A quick way to check if it's hot enough is to drop in a small piece of bread; if it sizzles and bubbles vigorously, the oil is ready for frying.

                Fry the Bites: Carefully add a few breaded mozzarella bites to the hot oil at a time, making sure not to overcrowd the pan. Fry them for approximately 2-3 minutes, or until they are golden brown and crispy on all sides. If needed, gently flip them halfway through to ensure even cooking.

                  Drain Excess Oil: Using a slotted spoon, carefully remove the fried bites from the oil and transfer them to a plate lined with paper towels. This will allow any excess oil to drain off. Continue the frying process until all bites are cooked.
