Ingredients

2 large onions, sliced into thick rings (approximately 1 inch wide)

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

8 oz fresh mozzarella cheese, cut into thick slices (about 1/2 inch)

1 tablespoon olive oil (for frying)

Fresh basil leaves (for garnish, optional)

Marinara sauce (for dipping)

Instructions

Prep the Onions: Slice the onions into thick rings, ensuring they are about 1 inch wide. Carefully separate the rings and set them aside in a bowl.

Set Up the Breading Station: Prepare a breading station by arranging three shallow bowls. Fill the first bowl with flour, whisk the eggs in the second bowl, and in the third bowl, mix the panko breadcrumbs with garlic powder, smoked paprika, salt, and pepper until evenly combined.

Bread the Onion Rings: Take a separate onion ring, coat it thoroughly in the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing the extra egg to drip back into the bowl. Finally, transfer the onion ring to the breadcrumb mixture, pressing down gently to coat it well. Continue this process until all onion rings are breaded.

Assemble the Melts: Take one breaded onion ring and place a slice of mozzarella cheese between it and another onion ring to form a sandwich. Lightly press the layers together to ensure they stay intact. Repeat this assembly process until you've created the desired number of onion melts.

Fry the Melts: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the mozzarella onion melts to the skillet in batches, being careful not to overcrowd the pan. Fry for approximately 3-4 minutes on each side or until they turn a rich golden brown and are crispy.

Drain the Excess Oil: Once the melts are perfectly fried, transfer them to a plate lined with paper towels to absorb any excess oil.

Garnish and Serve: If desired, garnish the crispy mozzarella onion melts with fresh basil leaves for a pop of color and added flavor. Serve hot alongside a small bowl of marinara sauce for dipping.
